La Giuva Valpolicella.

Valpolicella DOC produces some of the lightest wines in Veneto. The grapes are harvested and undergo a brief 15-day drying process to intensify their flavors, and then they are aged in stainless steel tanks to preserve the wine’s fruity character. Expect to encounter fresh fruit notes, particularly cherry, complemented by hints of herbs and licorice. Great wine for hot days in Singapore, serve it slightly chilled at 14°C.

One step higher and heavier is Valpolicella Superiore DOC. This wine undergoes an extended drying process (30 days) and is aged for 12 months in oak, giving it a distinct character. Expect notes of spice intermingled with subtle sweetness and a long finish, reminiscent of licorice.

Taking another step higher, we arrive at a serious wine called Amarone. It undergoes an even longer drying process, around 3-4 months, which increases the concentration of the fruit, making the wine incredibly rich and full-bodied. This wine is then aged for 24 months in new oak barrels, imparting even richer spice notes.
